Levrek — The King of the Mediterranean

Few fish capture the spirit of the Mediterranean quite like the levrek (European sea bass). Silvery, sleek and wonderfully adaptable, it is the fish we reach for first when guests ask, “what’s good today?”

In the Mediterranean

Wild levrek patrol the rocky coasts and estuaries from Antalya to the Aegean, hunting small fish and crustaceans in the surf line. They are athletic predators — fast, clean and prized by line fishermen for their fighting spirit. Most of what we serve is line-caught within a day of reaching our kitchen, never frozen.

Flavour & Texture

Expect firm, bright-white flakes with a clean, almost sweet finish and very little fat. Levrek is forgiving to cook: it holds together on the grill and takes beautifully to heat, salt, lemon and olive oil. Its subtlety is exactly what makes it the perfect canvas for classic Turkish preparation.

How we serve it at Antalya Balik

  • Salt-crusted whole — baked in a crust of sea salt and egg white, cracked open at the table.
  • Charcoal-grilled — over oak coals, finished with herbs, lemon and cold-pressed olive oil.
  • Fırın levreği — oven-baked with tomatoes, peppers and onions, Aegean style.
Sustainability note: We prefer wild line-caught levrek during open season and source ASC-certified sea bass from responsible Turkish farms the rest of the year.
