Common octopus live among rocks and seagrass beds, hunted by small-boat fishermen using traditional pots and lines. They are intelligent, fast-growing and, when sourced carefully, a responsible choice.
Flavour & Texture
Octopus is lean and savoury, with a firm-but-tender bite when properly prepared. The secret is patience — it must be tenderised (traditionally by beating against the rocks) and slow-cooked before a final char.

- Ahtapot ızgara — slow-cooked, then char-grilled with olive oil and vinegar.
- Salata — warm octopus salad with arugula, lemon and capers.
