Barbunya — The Ruby of the Aegean

Few fish are as photogenic as the barbunya (red mullet), its rosy-red skin shimmering against crushed ice. Small, delicate and intensely flavoured, it is a true connoisseur’s fish.

In the Mediterranean

Red mullet live over sandy and muddy bottoms, using their twin chin barbels to rummage for shrimp and worms. They rarely grow large, which is part of their charm — the smaller the fish, the more prized the eating.

Flavour & Texture

The flesh is pale pink, fine-textured and unusually sweet, with a faint shellfish note that comes from their diet. It is delicate and best eaten spanking fresh, cooked simply so nothing masks its natural flavour.

How we serve it at Antalya Balik

  • Tavada — pan-fried whole in olive oil until the skin crisps.
  • Fırında — baked briefly with lemon and a touch of garlic.
  • Çiğ tatlama — lightly cured in salt and citrus, Aegean style.
Tip: Barbunya is best shared — order a few per person with a glass of chilled rosé.
