In the Mediterranean
Bluefin migrate vast distances, entering the Mediterranean to spawn. Because they grow slowly and are heavily prized, we treat tuna with real respect — serving it rarely and only from traceable, quota-managed landings.
Flavour & Texture
Tuna is firm, meaty and rich, with a clean ocean flavour and a buttery quality in the belly (toro) cut. Best served rare to medium — overcooked tuna turns dry and loses its magic.
How we serve it at Antalya Balik
- Seared loin — sesame-crusted, rare in the centre, sliced over greens.
- Tartar — hand-diced with lime, capers and Aegean olive oil.
- Peyazlama — lightly cured and shaved over citrus salad.
Sustainability note: Bluefin is a species we serve sparingly. We follow current stock advice and favour Mediterranean albacore as a lighter-impact alternative.
