Mercan — Coral Treasure of the Reefs

The mercan (red sea bream) is a reef and wreck dweller with a soft pink blush and strong, predatory jaws. It is a dependable, flavourful fish that earns a loyal following.

In the Mediterranean

Mercan favour rocky reefs and shipwrecks along the coast, where they hunt crabs and shellfish. That hard-shelled diet gives their flesh a firmness and depth that chefs love.

Flavour & Texture

Large flakes, firm texture and a clean, sweet flavour with a hint of the reef. The skin crisps beautifully, making it ideal for both pan and oven.

How we serve it at Antalya Balik

  • Fırında mercan — baked whole with cherry tomatoes and oregano.
  • Pane — filleted, lightly crumbed and fried golden.
  • Buğulama — gently steamed with white wine and vegetables.
Pair it with: a crisp, mineral Turkish white from the Aegean coast.
