The çipura (gilt-head bream) takes its name from the shining gold crescent stamped between its eyes. It is one of the most beloved table fish of the Turkish coast — and a permanent fixture on our grill.
In the Mediterranean
Çipura thrive in the warm, shallow bays of the Mediterranean, feeding on shellfish and small crustaceans along the rocks. This shell-rich diet is what gives their meat its character — slightly richer and more savoury than levrek, with a firmer bite.
Flavour & Texture
White, moist and clean-flavoured, çipura carries a gentle sweetness and a faint briny depth from its diet of mussels and barnacles. The flesh holds together beautifully and stays juicy even over high heat.
How we serve it at Antalya Balik
- Kömürde çipura — whole over charcoal, skin crisp, finished with lemon.
- Fırında — baked with a bed of root vegetables and thyme.
- Filleted meze — cold, dressed with olive oil and lemon as part of a starter plate.
